Buffalo Shredded Chicken

Buffalo Shredded Chicken

I don’t know about ya’ll (insert southern accent) I LOVE anything buffalo!!! Wings, sliders, dip… Sometimes I even put buffalo sauce on my eggs. To far?.. I know but to each their own. Football season is around the corner and this is a super simple recipe that can be made in 30 minutes while your family is getting their favorite team’s gear on and  watching pre-game.

Buffalo Shredded Chicken

Instant Pot

  • 1 lbs chicken breast
  • 1 Cup Franks red hot wing sauce
  • 1 Tbsp hot sauce (I use Louisiana hot sauce)
  • 1 Packet ranch dressing seasoning
  • 1/4 Cup of chicken stock
  • 1 Tbsp Honey
  • 1 Tbsp butter

Place stock, honey and butter into pot and mix. Place chicken breast in pot and pour ranch packet around sides and on top of chicken.

  • Make sure valve is sealed!!! This is SUPER DUPER UBER important!!!!!!!!!!!!

Close top and press pressure cook button. Change time with the + or – to 15 minutes. Then watch @SouthernCharm while it cooks….. Well thats what I do.

It will take a few minutes for the pressure to fill in the pot. Once the pot is ready the timer will start the 15 minute count down. After the 15 minutes are up you can wait for the natural release (around 10-12mins) or you can take a oven mit and release valve on your own. *** Please be careful doing so and DO NOT have your face anywhere close to the valve. This steam is not like the steam you get at your monthly facial… Comprende?!?

Once steam is released open and remove chicken and place in a bowl to shred.

Of course you can use a fork to shed but moving to the south we BBQ and Smoke meat ALL the time so these are my favorite shredding tool.

Cave tool

Press the soup/ broth button and let it cook down for about 4 minutes before putting chicken back  with Franks Red Hot Wing Sauce and 1tbsp of your favorite hot sauce. Mix together and let liquid reduce. This should only take a few minutes.

Serving in lettuce cup, tortilla, slider buns  or use for buffalo chicken dip and diced carrots and celery for your garnish.

**** This recipe can of course be done in a crockpot temp  low 8 hours, high 4 hours. At the reduction of liquid part place in sauce pan on stove.
