
My love for cooking comes from my family and the countless meals we have had all together cooking in the kitchen. During this social distancing it has been incredible hard on me because I love having everyone over, in the kitchen, sitting down together at the dinner table. But, with that said I have had a lot more time for creating easy recipes to share with you all!
I have always been intimated by pork! Did I undercook it…. DID I over cook it…. Is it seasoned enough…. Maybe a little more salt…. OK that was to much!
YES I have done all of the above. But the only way to a great recipe is trial and error.
INGREDIENTS:
2 1lb Pork Tenderloin
4 Large red Potatoes
4 Large carrots
Sauce
1/2 Cup Packed Brown sugar
1/4 Cup Maple Syrup
1 Tbsp Honey
1 Tbsp Butter
3 Tbsp Whiskey
1/2 Tsp Red Pepper
1/2 Cup beef broth
RUB
1 Tbsp Paprika
1/2 Salt
1 Tsp Onion Power
1 Tsp Garlic Power
Lets get Cooking….
Pre-heat Oven to 375 degrees
As the oven is heating wash carrots and potatoes. Peel and dice carrot lengthwise. Dice potatoes into about 1’2 inch square. Try to make sure the potatoes are all cut the same sizes so they cook evenly.
Place potatoes and carrots into a mixing bowl. Pour 2 Tbsp of olive oil, 1 Tsp salt and a dusting of onion powder, mix. Making sure that they are coated evenly. I separate the potatoes and carrots because I have a 50/50 house on carrot love.
Spray a sheet pan down with non-stick spray. Arrange potatoes and carrots on sheet pan and place in oven for 25 mins.
Take tenderloin out of fridge. You want it out for a least 20 mins before cooking to insure it cooks evenly.
Sauce time…
Grab a small sauce pot. Melt butter and honey, then add brown sugar, syrup, whiskey, beef broth and red pepper. Bring to boil to cook off the alcohol then reduce heat to simmer for 7 mins. The sauce should reduce about 1/2 inch. Set aside
Now its time for the rub.
Place paprika, salt, onion powder and garlic powder and small bowl mix.
Coat the rub all over tenderloin.
Grab your cast iron pan or any large pan that is oven safe. Pour a 1tbsp of oil in pan and heat to medium high. Place pork in pan and brown all sides. About 2-3 mins pre side.
Once potatoes and carrots have cooked for 20 mins. Remove them from oven.
Heat Oven to 400 degrees
Have your tenderloin make move for the potatoes and Carrots.
Pour half of your sauce on tenderloin. Reserve the rest to dizzy on pork and carrots when plating.
Bake in the oven for 20minutes and WHALA dinner is served!
